Caramel Stuffed Chocolate Chunk Cookies / Piskoti polnjeni s karamelo

Christmas has already passed but still, I hope you had a nice Christmas! I think this year's Christmas was my favorite so far. This year, my family for the first time succeeded in sticking to our agreement, that we will not be buying gifts. Because if we are real (let's get real now) ... these are just things. And I do not need more new things, but I do need socializing in a pleasant home atmosphere, good food, cat who actually wants to cuddle with me and as few added pounds on my thighs as possible. This is my first December, when I didn't go overboard with eating everything that smells sweet. Well, I'm quite proud of myself... how did I managed to do this?! For the next few days I plan to post all the cookies  that I baked in December. Please don't be mad at me, I know I should published them earlier...I know, who needs recipes for cookies in January .. but you will get them anyway =)! Just be patient with me.  When I publish all these cookies, I'll transform this blog a bit, I think it's time for change, even though I just started, haha! Ideas grow, they click in my head at night when I can't sleep, I get some from very special people and yes, it is time for a change. Yep, these cookies are super good, try them, don't just look ;).

Ingredients 
  • 3 sticks (1 1/2 cup) unsalted butter, softened
  • 1 1/2 cup dark brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 eggs
  • 4 tsp. vanilla extract
  • 4 cups all-purpose flour
  • 4 tsp. cornstarch
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 1/2 cups chocolate chunks 
  • 1/2 cup dark chocolate, finely chopped
  • 18 caramel candies, cut in half to give you 36

The process
Preheat oven to 350 degrees. Line baking sheets.In a large bowl, add flours, cornstarch, baking soda, and salt. Whisk to combine. Set aside.
In the bowl of a stand mixer fitted with the paddle attachment, cream together butter and sugars for 2 minutes until light and fluffy. Then add in the eggs and vanilla extract and beat for 2 more minutes. 
Slowly add in the flour mixture and mix until all combined and well-incorporated. Using a spatula, fold in the chocolate chunks and finely chopped dark chocolate. 
Take a scoop of cookie dough, roll it into a ball, then using your thumb, press into the center, put the caramel candy in the center, then re-roll the ball to cover the caramel candy. Repeat until all dough has been used up. 
Bake for 11-13 minutes. They will look super soft but they continue cooking after you remove them from the oven. Let cool on baking sheet COMPLETELY before you move them to a wire rack. If you move them too soon, they’re too delicate so they’ll break and the caramel will ooze out from beneath the cookie. Store in an airtight container.



Je že mimo pa vseeno, upam, da ste imeli lep Božič! Mislim, da je bil letošnji Božič moj najljubši do sedaj. Letos je moji družini prvič uspelo, da smo se res držali dogovora, da si ne bomo kupovali daril. Ker če smo realni (bodimo malo realni za sekundo)...to so samo stvari. In jaz ne potrebujem več novih stvari, ampak potrebujem druženje, v prijetni domači atmosferi, dobro hrano, mačka, ki se dejansko hoče crkljati z mano in čim manj dodanih kil na stegnih. Tole je zame prvi veseli december, ko se nisem prenažirala z vsem kar diši po sladkem. Hja, prav ponosna sem nase, kako mi je to sploh uspelo??! Za naslednje dni imam v planu objavo vseh piškotov, ki sem jih spekla decembra. Prosim, ne me kregat, vem, da bi jih morala prej objaviti, le kdo potrebuje januarja recepte za piškote..ampak vseeno jih boste dobili=)! Bodite potrpežljivi z mano. Ko bom objavila vse te piškote, bom obrnila nov list in malce preoblikovala tale blog, čas je za spremembe, pa čeprav sem komaj začela, haha! Ideje rastejo, klikajo mi ponoči, ko ne morem spati, nekaj jih dobim od posebnih ljudi in ja, čas je za spremembo. Jep, tile piškoti so super hudi, probajte, ne samo gledati ;).

Sestavine
  • 340g nesoljenega masla (zmehčan)
  • 300g rjavega sladkorja
  • 100g kristalnega sladkorja
  • 2 jajci
  • 4 žličke vanilijevega ekstrakta
  • 500g vse namenske moke
  • 4 žličke gustina
  • 2 žličke soda bikarbone
  • 1 čajno žličko soli
  • 265g čokoladnih solzic
  • 90g temne čokolade, drobno sesekljane
  • karamelni bonboni (mehki)


Postopek
Pečico segrejte na 180 Stopinj C in položite peki papir na pekač. V veliki skledi zmešajte moko, gustin, sodo bikarbono in sol.
V skledi z mešalnikom zmešajte maslo in sladkor, do kremastega. Nato dodajte jajca in vanilijo ter miksajte 2 min.
V mikser počasi dodajajte mešanico z moko in miksajte dokler niso vse sestavine združene.
Z lopatico dodajte vso čokolado. Vzemite kepo mase in jo zrolate v kroglico, pritisnite nanjo s palcem, položite karamelo v center in jo prekrijte z maso.
Pečemo 11-13 minut. Na pogled bodo po tem času iugledali mehki, vendar se še naprej pečejo, ko jih malo pustite zunaj. Piškoti se naj popolnoma ohladijo, preden jih odstranite iz pekača, saj so drugače premehki in lahko razpadejo.

Cupcakes with Nutella / Cupcakes z Nutello


Did you miss me? I'm baking cookies and enjoying in my sparkly, freshly cleaned apartment. I love order and cleanliness! Today was suuuuuch a nice day. It reminded me of the beginning of spring. Neja please be patient, it will be here soon. When I went to the store to buy the ingredients for the cookies, I had the biggest smile on my face because of the sun. And then what happened? Horror, I'm kinda  ashamed to say. Smiling I walked, I imagined how birds fly around my head and then I almost fell! Yep! On the sidewalk...there it was, a wire circle on the pavement  and I got myself tangle in it! I barely managed not to fall on the asphalt! It happened so quick! But it lasted long enough to made me feel like shit. I was so embarrassed. And it happened to me next to  the most busy road. I hope that only few people saw me, on the other hand ... if I made them  laugh, then it's not that bad. This is worth something :). I don't know why this happens to me  all the time. Once I fell during running. It was in the spring or summer, I know that it was already dark. I was listening my ipod, jogging and all of a sudden I was on the floor! What the hell! Two women asked me if I was okay, I was so happy that it was dark outside, so they couldn't see my red face. I said, that 'I'm cool and started to run again. Nothing upsets me more than not reaching the goal that I had set. Then the next time I fell was in a parking lot next to a building where I live. I ran because I wanted to catch the bus. I fell pretty hard  and today I have a scar on my knee. So today I didn't fell because I caught myself, but I later hit the edge of  something at home and ... yep, I had a bloody knee. Everything is fine, let's go to today's recipe :). I always wanted to try a  cupcake, they look so stunning! They made me feel so full and even I could eat only one at a time. I was looking for the recipe for the glaze quite some time and only the third day I was able to do exactly as I imagine it. It's totally UNhealthy and if you will do it, do not apply so much as I did, because  I did that just because of  photos.

Ingredients for muffins
  • 220 g of flour
  • 1 bag of baking powder
  • 200 ml milk
  • 80 g cocoa
  • 100 g of sugar
  • 2 eggs
  • 2 teaspoons vanilla sugar
  • 90 g melted butter
  • Nutella

The process

In a large bowl place the flour, sugar, baking powder, cocoa and vanilla sugar. Stir. In a separate bowl, combine the eggs, milk and melted butter. Each one thoroughly, then pour the liquid mass to the first mass and mix well to remove lumps.

Take baking molds for muffins and add  in to 1/2 mass, then add a teaspoon of Nutella, which Iyou heated a little, so it is more liquid. Then add the reat od mass to cover Nutella.

Bake 15 minutes at 180 ° C.

Allow the muffins to cool, make frosting and decorate cupcakes with it.

Ingredients for buttercream icing
  • 1/2 stick unsalted butter - room temperature
  • 1/2 stick salted butter - room temperature
  • 1/2 cup of margarine
  • 1 tablespoon Clear Vanilla extract
  • 1 pound of powdered sugar 
  • 2-3 tablespoons very cold milk
  • Coloring for food (I used  raspberry)

The process

Cream the butter and margarine in the bowl of an electric or stand mixer. Add the clear vanilla extract and combine well. Begin adding in the sugar and mixing thoroughly after each addition, add coloring for food. After all of the sugar has been added and mixed thoroughly, begin adding the very cold milk... one tablespoon at a time, combining very well after each addition (mixer on medium-high to high speed) until you reach the desired consistency.

Ku-ku, ste me kaj pogrešali? Ravno pečem piškote in uživam v sveže pospravljenem stanovanju. Obožujem red in čistočo! Danes je bil takooo zelo, zelo lep dan. Malo me je spominjal na začetek pomladi. Še malo potrpi Neja, saj bo kmalu tu. Ko sem šla v trgovino po sestavine za piškote, sem imela zaradi sončnega vremena  največji nasmeh na obrazu. In kaj se je potem zgodilo? Groza, kar sram me je povedati. Nasmejano sem hodila, domišljala sem si kako ptički letajo okoli moje glave in potem sem se lovila po pločniku in skoraj padla! Jep! Na pločniku je ležal žičnat krog in jaz sem se zapletla vanj! Komaj mi je uspelo, da se res nisem raztreščila po asfaltu! Vsega skupaj je bilo seveda konec v parih sekundah, dovolj, da bi se najraje ugreznila v zemljo. In to se mi je zgodilo ravno ob najbolj prometni cesti. Upam, da me je videlo čim manj ljudi, po drugi strani pa...če sem jih nasmejala, je tudi to nekaj vredno :). Ne vem zakaj se mi to stalno dogaja. Enkrat sem se podričala po vseh štirih sredi teka. Bilo je enkrat spomladi ali poleti, vem da je bilo že temno. Poslušala sem ipod, tekla in kar naenkrat sem bila na tleh! Nič mi ni bilo jasno! Dve ženski sta me vprašali, če sem v redu, še dobro, da je bilo temno, da se ni videlo mojega rdečega obraza. Odvrnila sem, da sem kul in odlaufala naprej. Nič me ne razjezi bolj kot nedoseganje cilja, ki sem si ga zastavila. Potem naslednjič sem odletela na parkirišču pri bloku. Tekla sem, ker sem lovila trolo. Padla seveda in še danes imam brazgotino na kolenu. Danes torej nisem padla, ker sem se ujela, sem se pa kasneje doma udarila v rob in...jep, imela sem krvavo koleno. Vse je v redu, raje pojdimo k današnjemu receptu :). Vedno gledam te cupcakes, tako omamno izgledajo! Super nasitne so in celo jaz sem lahko pojedla le eno naenkrat. Kar nekaj časa sem iskala recept za glazuro in šele tretji dan mi je uspelo narediti točno tako, kot sem si jo zamislila. Je totalno NEzdrava in če jo boste delali, je ne nanesite tako veliko, kot sem jo jaz, ker to sem naredila samo zaradi fotografij.

Sestavine za mufine
  • 220 g moke  
  • 1 vrečka  pecilnega praška 
  • 200 ml mleka
  • 80 g kakava
  • 100 g sladkorja 
  • 2 jajci
  • 2 žlički vanilijevega sladkorja 
  • 90 g stopljenega masla
  • Nutella
Postopek

V večjo skledo damo moko, sladkor, pecilni prašek, kakav in vanilijev sladkor. Premešamo. V posebni skledi zmešamo jajca, mleko in stopljeno maslo. Vsako posebej premešamo, nato tekočo maso zlijemo k prvi masi in dobro premešamo, da odpravimo grudice.

V pekač za mafine zložimo modelčke in v njih do 1/2 nadevamo maso, nato dodamo čajno žličko nutelle, ki jo prej malo segrejemo, da je bolj tekoča. Nato nadevamo maso tako, da napolnimo modelček do 4/5.

Pečemo 15 minut pri 180 °C.

Počakamo, da se muffini ohladijo, naredimo glazuro in z njo okrasimo cupcakes.


Sestavine za glazuro
  • 57g nesoljenega masla - sobna temperatura
  • 57g soljenega masla - sobna temperatura
  • 108g  margarine
  • 1 žlica vanilijevega ekstrakta 
  • 450g sladkorja v prahu
  • 2-3 žlici zelo mrzlega mleka
  • Barvilo za hrano (jaz sem uporabilo malino)
Postopek

V mikserju zmešajte maslo in margarino. Dodajte ekstrakt vanilije. Dodajte sladkor v prahu in temeljito zmešajte, dodajte barvilo. Ko je vse temeljito zmešano dodajte žlico mleka, nato spet sladkor in spet žlico mleka. Masa ne sme biti preveč mokra zato bodite res previdni z mlekom.

Panna cotta / Panakota


Wuu-hoo, December is literally flying by and Christmas will be here in less than two weeks! Holy moly! During the weekend I downloaded 300 most popular Christmas songs and yes, I've been annoying people with them =). I haven't decorated the apartment, because I have no space and I don't know where to put all these ornaments, but I have my thoughts "decorated" with Christmas, haha. I didn't made this panna cotta for myself, but for Truflle because he loves it. I think it's boring, it reminds me of pudding, which I also don't like, but that didn't stop me from making it, because I want to do everything at least once. Preparation is so simple that even I'm not sure if I really prepared it, because it was all so quickly done=). You can make dressing from your favorite fruit, I think the berries are most appropriate. I used persimmon, because I had them at home. I put them in a blender and I added a little powdered sugar.

Ingredients
  • 5 dl heavy cream
  • 1 dl milk
  • 100 g sugar
  • 1 vanilla bean or vanilla powder
  • 6  gelatine sheets 



The process

Soak gelatin for 10 minutes in a small amount of water (about 1 dl). Sratche the inside of vanilla with knife.Pour in the pot cream, milk, 50 g sugar, and vanilla. Cook on low heat for about 5 minutes, until the sugar dissolves, then remove. Add gelatin (you have to squeeze gelatin with your fingers, so you remove all water) and stir until everthing blends together.

Molds or cups rinse with cold water and fill with the prepared mixture. Cover them with a transparent foil and put them in the refrigerator for 2 hours.

Chilled panna cotta turn over on a plate and top with sauce.



Wuu-huuu, december dobesedno leti mimo in Božič bo tukaj čez manj kot dva tedna! Holly moly! Med vikendom sem naložila 300 najbolj popularnih božičnih pesmi in ja, sem že začela najedati z njimi =). Stanovanja niti nisem krasila, ker nimam prostora in ne vem kam bi vtaknila vse te okraske, so pa zato moje misli "okrašene" prav lepo božično, hih. Tole panakoto nisem naredila zase, ampak za Tartufka, ker jo obožuje. Meni se zdi dolgočasna, spominja me na puding, ki ga prav tako ne maram, ampak to me ni odvrnilo od tega, da jo pripravim, ker hočem vse narediti vsaj 1x. Priprava je tako preprosta, da sploh nisem prepričana, če sem jo res pripravila, ker je bilo vsega tako hitro konec=). Preliv lahko naredite iz najljubšega sadja, mislim da je jagodičevje še najbolj primerno. Sama sem uporabila kakije, ker sem imela domače iz Strunjana. Samo spasirala sem jih in dodala malo sladkorja v prahu.

Sestavine

  • 5 dl sladke smetane
  • 1 dl mleka
  • 100 g sladkorja
  • 1 vanilijev strok ali vanilija v prahu
  • 1 vrečka želatine v lističih (6 lističev)


Postopek

Želatino za 10 minut namočimo v manjši količini vode (približno 1 dl), da nabrekne. Vanilijev strok podolžno razpolovimo in z noževo konico izpraskamo stržen. V posodo nalijemo sladko smetano, mleko, 50 g sladkorja in vanilijo. Na zmernem ognju kuhamo približno 5 minut, da se sladkor raztopi, nato odstavimo. Dodamo ožeto želatino in mešamo, da se le-ta povsem razpusti.

Modelčke ali skodelice splaknemo s hladno vodo in napolnimo s pripravljeno zmesjo. Prekrijemo jih s prozorno folijo in za 1 do 2 uri damo v hladilnik, da se želatina strdi.

Ohlajeno strjenko zvrnemo na krožnik in prelijemo s prelivom.

Sushi / Susi


Wiiinteeeer! This year I actually like winter, despite the fact that I was driving yesterday with the bus from one station to the other instead of 2 minutes 15 minutes and  the bus almost collapsed from all the people in it. While I waited at the bus station, I stared at the sky and the snowflakes that were falling from the sky were so big! AAhhhh, it's nice to be a child for a moment. Even better was the time before that, I was in Lolita drinking tea and I chatted for three hours. All that positivity! I don't like negativity, pessimism, and I really started to avoid anything that steals my energy. At some point in your live you realize who's worth your time and who is in it for nothing. My life is mine alone, I'm responsible for it and I'll choose people who are  worth my time :). Hmm, it's not only winter time but also sushi time! I know that there are many people who don't like sushi, or have never eaten sushi, in fact, first time I ate it was only two years ago. Yes, dipping sushi in soy sauce, to which is added wasabi is something I really like. That's why I absolutely had to make it at home! :) I just had to! It was okay just the rice was too wet and not salty enough.  It would be ideally, if I had that thing in which you can cook rice. I am confident that I will succeed next time ;).

Ingredients

  • Nori (dried seaweed)
  • 1.5 cups of rice for sushi
  • 30 g fresh fish (salmon, tuna)
  • 1 carrot
  • 1 cucumber
  • 1 avocado
  • 115 ml rice vinegar (white one)
  • 1 tablespoon sugar
  • 0.5 teaspoon salt


The process

Pour rice in a strainer and rinse under running water . Pour the washed rice in a pot and add water. Right ratio of water to rice is 1.25: 1. Cook the rice to boiling. Every minute or two rice mix well. When the water boils, reduce the heat to the lowest level, stop mixing rice and cover the pot. After eight minutes of cooking look at how much water is in the pot. Rice cook until it softens and absorbs all the water in the pot.

Remove  cooked rice. Rice, sticking to the bottom leave in the pot. In a saucepan heat the rice vinegar, sugar and salt and stir until the salt and sugar is completely dissolved. The prepared liquid pour over rice and mix well. Allow to cool to room temperature.

Peel carrot and using a sharp knife cut into long, square sticks. Peel cucumber, cut in half and remove seeds. Cucumber cut into long sticks. Wash piece of fish, wipe and cut into thicker, about 0.5 cm thick and long strips. Peel avocado and cut into long sticks.

Spread bamboo rolling basis. Moisten your hands and take full palm of rice and spread it on algae leaving about 2 inches above edge algae empty.

At the center of the rice in a straight line arrange fish / avocado / cucumber / carrot strips. Use your fingers to push the bottom edge of the rice with your hands and shape roll tightly.

Put the roll on a wooden board and with a sharp knife, dip it in cold water, cut into bite-sized pieces.

Repeat this procedure until you used up all the rice and ingredients.



Zimaaaa! Letos mi je zima prav všeč in to kljub temu, da sem se včeraj z busom od ene postaje do druge vozila  namesto 2 minuti 15 minut in da se je bus skoraj sesedel od vseh ljudi na njemu. Medtem, ko sem čakala na avtobusni postaji, sem gledala v nebo in iz njega niso padale snežinke ampak cele krpice, tako velike so bile! AAhhhh, lepo je biti otrok za trenutek. Še lepše je bilo pred tem, v Loliti klepetati ob čaju tri ure. Sama pozitivnost! Ne maram negativnosti, pesimizma in resnično sem se začela oddaljevati od vsega, kar mi krade energijo. Na neki točki v življenju dojameš, kdo je vreden tvojega časa in kdo je v njemu za brezveze. Življenje je moje, sama sem odgovorna zanj in sama bom izbirala ljudi, ki mi dobro denejo :). Hmm, ni samo zimski čas ampak tudi suši čas! Verjamem, da je veliko takih, ki sušija ne marajo ali pa ga niso še nikoli jedli, tudi sama sem ga pozno odkrila, šele dve leti nazaj. Da, pomakanje sušija v sojino omako, v katero je dodan wasabi hren, mi je priraslo k srcu. Zato sem ga absolutno morala pripraviti doma! Preprosto morala sem :)! Saj mi je kar uspel, edino pri rižu sem ga pobiksala, bil je preveč moker in premalo slan. Idealno bi bilo, če bi imela tisto zadevo za kuhanje riža. No, naslednjič bo sigurno popoln ;).

Sestavine

  • Nori alge
  • 1,5 skodelice riža za sushi
  • 30 dag sveže ribe (losos, tuna)
  • 1 korenček
  • 1 kumara
  • 1 avokado
  • 115 ml riževega kisa (prozornega)
  • 1 žlica sladkorja
  • 0,5 žličke soli



Postopek

Riž stresemo na cedilo in pod tekočo vodo spiramo toliko časa, dokler izpod cedila ne priteče čista voda. Opran riž stresemo v lonec in ga zalijemo z vodo. Vode mora biti toliko, da je riž malo prekrit; pravo razmerje med vodo in rižem pa je 1,25 : 1. Lonec pristavimo na močen ogenj in riž kuhamo do vretja. Vsako minuto ali dve riž dobro premešamo. Ko voda zavre, zmanjšamo ogenj na najnižjo stopnjo, riž nehamo mešati in lonec pokrijemo. Po osmih minutah kuhanja pogledamo, koliko je še vode v loncu. Riž kuhamo, dokler se ne zmehča in posrka vso vodo v loncu.

Kuhan riž odstavimo in ga s pomočjo lesene kuhalnice predevamo v skledo. Riž, ki se je oprijel dna posode, pustimo v loncu. V kozici segrejemo rižev kis, sladkor in sol ter mešamo toliko časa, da se sol in sladkor povsem raztopita. S pripravljeno tekočino prelijemo riž in ga dobro premešamo. Pustimo, da se ohladi na sobno temperaturo.

Korenček operemo, olupimo in s pomočjo ostrega noža razrežemo na daljše, enakomerne kvadratne palčke. Kumaro olupimo, operemo, razrežemo na pol in odstranimo semena. Tudi kumaro razrežemo na daljše palčke. Kos ribe operemo, obrišemo in razrežemo na debelejše, približno 0,5 cm debele in dolge trakove. Avokado olupimo in razrežemo na daljše palčke.

Na delovno površimo razgrnemo bambusovo podlago za zvijanje shushija. Na podlago položimo nori algo tako, da je groba stran obrnjena navzgor. Navlažimo si roke, s katerimi iz sklede zajemamo za polno dlan riža, ki ga položimo na algo. Riž s prsti enakomerno razprostremo po algi, tako da ostane približno 2 cm zgornjega roba alge praznega.

Na sredino riža v ravni vrsti razporedimo najprej trakove ribe, nato pa še palčke korenčka in kumare. Sushi začnemo zvijati na spodnjem robu, ki ga s pomočjo podlage preložimo čez ribo in zelenjavo. S prsti potisnemo spodnji rob ob riž in z rokami oblikujemo tesno rolo. Rolo s pomočjo podlage zvijemo do konca in znova z rokami učvrstimo, da dobimo čvrsto rolo. Rolo preložimo na leseno desko in z ostrim nožem, ki ga pomočimo v hladno vodo, razrežemo na grižljaj velike kose.

Postopek ponavljamo toliko časa, dokler ne porabimo vsega riža in vseh sestavin.

Chocolate Peanut Butter Sandwiches / Piskoti z arasidovim maslom


This recipe is for all lazy bakers, ha ha. You won't even have to put them in the oven. In fact you will only change boring cookies into more interesting ones. Uh recycling therefore, kinda:). You know what I should be doing, instead of daydreaming about cookies? Jogg, workout, run! I think  September was the last month when I was exercising. Oh, shame on me :(. But, it's so gray and cold outside. I prefer drinking caramel tea, burning candles and scented sticks and just be lazy. I would go running, I love running, my warm months are all about running . There's nothing more awesome than putting on sneakers, go out and start running in the middle of nature, specially in the summer evening around 8, when everything is yellow because of sunset. Then even iPod isn't necessary and I usually run without it. I prefer to listen to nature and my own steps. The thing that I don't like about running is a solo run. Most of the time I run alone, with my thoughts in my head. Well, you should have an empty head but I can't resist. All kinds of plans click in my head during running. But I often ran in a pair as well and it's amazing! Because then this means that I'm hanging out with someone, not only working out. Ingredients

  • Cookies (plain, simple ones)
  • 1 cup peanut butter
  • 1 cup powdered sugar
  • Chocolate


The process
Melt your chocolate.
Place cookies on a wax paper lined cookie sheet.
Proceed to dip cookies, one at a time in the chocolate.
If you want the chocolate to set up faster, place in the refrigerator. NOT THE FREEZER!
Combine your peanut butter and powdered sugar, then proceed to spread generously over the tops of your chocolate covered cookies.
Now spoon chocolate over the tops of your cookies.
Make sure to let excess chocolate drip off. Place back on waxed paper to set up.

Tale recept je za vse lene peke, hi hi. Teh piškotov vam niti v pečico ne bo potrebno dati. Pravzaprav boste samo predelali dolgočasne piškote v bolj zanimive. Uh reciklaža torej, recimo :). Veste kaj bi morala početi, namesto da sanjarim o piškotih? Joggati, laufati, teči! Mislim, da sem nazadnje migala septembra. Oh, sram me je :(. Če je pa tako sivo zunaj no in mrzlo. Raje se nalivam s karamelnim čajem, prižigam svečke in dišeče palčke ter lenuham. Saj bi šla teči, tek obožujem, zadnja leta so moji topli meseci obarvani s tekom. Ni lepšega, kot poleti okoli osmih zvečer, ko je vse rumeno zaradi zahajajočega sonca, obuti superge in teči sredi narave. Takrat niti iPod ni potreben in večinoma tečem brez njega. Ljubše mi je poslušati naravo in lastne korake. Tisto, kar me odbija pri teku je solo tek. Največkrat sem tekla sama, s svojimi mislimi v glavi. No, morala bi imeti prazno glavo ampak ne morem se upreti. Razni načrti mi kliknejo ravno med tekom. Sem pa velikokrat tekla tudi v paru in to je najlepše! To potem pomeni, da se tudi družim, ne samo migam, kar je najboljše. Tudi motivirana sem veliko bolje in takrat mi sploh ni tako težko teči. Res pogrešam tek s suportom ob strani. Da, potrebujem partnerja za tek. Se kdo javi?

Sestavine

  • Piškotki (navadni, preprosti, npr Albert)
  • 1 skodelica arašidovga masla
  • 1 skodelica sladkorja v prahu
  • Čokolada

Postopek
Stopite čokolado (v loncu grejte vodo do vretja, nato vanjo vstavite drugo posodo in vanjo položite čokolado, tako se bo stopila).
Piškote položite na peki papir.
Piškote potopite v stopljeno čokolado in jih postavite na peki papir.
Piškote položite v hladilnik, da se čokolada hitreje strdi. NE V ZAMRZOVALNIK!
Zmešajte arašidovo maslo in sladkor v prahu in nato obložite piškote z arašidovim maslom.
Z žlico zajemite čokolado in prekrijte arašidovo maslo.
Postavite nazaj na peki papir in v hladilnik za 15min.

Happy Thanksgiving / Vesel zahvalni dan

Okay, I know that I live in Slovenia, where we don't celebrate Thanksgiving but who cares. I'm only interested in food anyway, it seems that food has an important role in this feast. Most people goes well beyond the normal limits so there is no wonder that they eat turkey sandwiches for a week afterwards. Basically, the point of  Thanksgiving is to thank  God for a good harvest. And now, when I researched this, I discovered that in some way we do celebrated it in Slovenia. On the Sunday after the feast of All Saints in the Catholic Church they celebrate Thanksgiving. They want to thank God for all the gifts they have received in the past year. These are crops that borne by the earth, and all the other gifts that they have recieved in the past year. Today is Thanksgiving in America, but they celebrate it in Canada too. In Canada it is celebrated on the second Monday in October and in America, the fourth Thursday in November. Truffle and I celebrated Canadian Thanksgiving, so in October. Not that he had any choice in this, it's gotten into me, that it would be fun if we did this, but he was happy  anyway  that I'll cook something again :). I love sweet potatoes, too bad it's so expensive in Slovenia, but it's Thanksgiving so I can afford it :). My plan was:  I'll cook everything, Truffle will google the history of this holiday and before we begin to eat, each of us will tell what he is grateful for. Well, in the end, I cooked for five hours (and I didn't baked the whole turkey because it would be really too much meat for the two of us, plus between photographing and reading recipes and jumping around...it takes a long time), it was completely dark outside when I finished (so these photos really suck and I'm so sorry .. grr, I didn't even want to publish them), Truffle didn't want to google this stuff and at the end we skipped the grateful part because the movie just started :). So, it is likely that we didn't really celebrate it, but at least the food was good ;).

Potato-Mushroom Pie

Ingredients
  • 2 tablespoons unsalted butter, plus more for dish 
  • 1 medium onion, cut into 1/2-inch dice 
  • mushrooms
  • broccoli
  • kohlrabi
  • 1 1/2 teaspoons coarse salt 
  • Freshly ground pepper 
  • 1 cup finely grated cheddar cheese (about 4 ounces) 
  • 1 cup finely grated Parmesan cheese, about 3 1/2 ounces 
  • 2 pounds potatoes, peeled and cut into 1/8-inch-thick rounds 
  • 1 tablespoon finely chopped thyme leaves 
  • 1 cup heavy cream
 

The process

Preheat oven to 350 F. Butter a 13-by-9-inch baking dish; set aside. Melt butter in a large skillet over medium heat. Add onion; cook, stirring occasionally, until softened, about 5 minutes. Add half of the mushrooms; cook until they are slightly softened. Add remaining mushrooms; cook, stirring occasionally, until mushrooms have released their juices and most of the liquid has evaporated, 8 to 10 minutes. Remove from heat. Season with salt and pepper. Cook broccoli and kohlrabi.
Combine cheeses in a small bowl; set aside. Cover bottom of prepared dish with potato slices, slightly overlapping them. Sprinkle with half of the thyme and a pinch each of salt and pepper. Sprinkle with 1/3 of the cheese and half of the mushroom mixture, add broccoli and kohlrabi. Repeat layering process, using all but 2 tablespoons cheese. Arrange remaining potato slices, slightly overlapping, around the edge of the dish. Pour cream over top. At this point, dish can be refrigerated, covered, up to 1 day; let stand at room temperature 30 minutes before baking.
Cover loosely with foil, and bake until bubbling, about 1 hour. Remove foil, and sprinkle with reserved cheese. Bake until top is golden, 20 to 30 minutes more. Transfer dish to a wire rack; let cool 10 minutes before serving.


Sweet Potato-Carrot Casserole

Ingredients
  • 2 large sweet potatoes (about 5 lb.) 
  • 1 1/2 pounds carrots, sliced 
  • 1/4 cup butter 
  • 1 cup sour cream 
  • 2 tablespoons sugar 
  • 1 teaspoon lemon zest 
  • 1/2 teaspoon salt 
  • 1/2 teaspoon ground nutmeg 
  • 1/2 teaspoon freshly ground pepper

 

The process

Preheat oven to 400 F. Bake sweet potatoes on an aluminum foil-lined 15- x 10-inch jelly-roll pan 1 hour or until tender. Reduce oven temperature to 350 F. Cool potatoes 30 minutes.
Meanwhile, cook carrots in boiling water to cover 20 to 25 minutes or until very tender; drain.
Process carrots and butter in a food processor until smooth, stopping to scrape down sides as needed. Transfer carrot mixture to a large bowl.
Peel and cube sweet potatoes. Process, in batches, in food processor until smooth, stopping to scrape down sides as needed. Add sweet potatoes to carrot mixture. Stir in sour cream and next 5 ingredients, stirring until blended. Spoon mixture into a lightly greased 13- x 9-inch baking dish.
Bake at 350 F for 30 minutes or until thoroughly heated. Remove from oven.


Okej, vem, da živim v Sloveniji, kjer ne praznujemo zahvalnega dne ampak komu mar. Mene vedno zanima samo hrana in zdi se, da ima hrana velik pomen pri temu prazniku. Večina ljudi gre krepko čez mejo normalnega tako, da sploh ni čudno, da jedo puranje sendviče in ostale ostanke še cel teden zatem. V osnovi je poanta praznika zahvaljevanje Bogu za dobro letino. In sedaj, ko sem malo raziskala zadevo, sem odkrila, da ga na nek način tudi v Sloveniji praznujemo. Na nedeljo po prazniku vseh svetih v katoliški cerkvi obhajajo zahvalno nedeljo. Ob tem se želijo Bogu zahvaliti za vse darove, ki so jih v preteklem letu prejeli. To so pridelki, ki jih je obrodila zemlja, ter vsi ostali darovi, ki so jim bili v preteklem letu naklonjeni. Hmmm, nisem vedela, vi pa verjetno tudi ne. Danes je zahvalni dan v Ameriki, praznujejo pa ga tudi v Kanadi. V Kanadi se ga praznuje drugi ponedeljek v oktobru, v Ameriki pa četrti četrtek v novembru. Tartuf in jaz sva praznovala kanadski zahvalni dan, torej že oktobra. Saj ne, da je imel kaj izbire pri tem, pičilo me je, da bi bilo zabavno, če bi naredila to, on je bil pa itak vesel tega, da bom spet nekaj skuhala :). Sladki krompir obožujem, škoda le, ker je pri nas tako drag, no pa saj je zahvalni dan in si ga lahko privoščim :). Vse skupaj sem si zamislila tako, da bom jaz skuhala vse, on bo pogooglal zgodovino ter poanto tega praznika in preden bova začela jesti, bo vsak od naju povedal, za kaj je hvaležen. No, na koncu je bilo tako, da sem jaz kuhala pet ur (pa nisem pekla celega purana, ker bi bila to res prevelika količina mesa za dva ampak samo fotografiranje vmes in branje recepta in skakanje gor in dol vzame veliko časa), zunaj je bila že čista tema (zato so te fotografije tako zanič in res se opravičujem..grr, najraje jih sploh ne bi objavila), Tartufiju ni bilo do googlanja in na koncu sva še tisti del o hvaležnosti izpustila, ker se je ravno film začel :). Tako, da ga verjetno res nisva praznovala, sva pa dobro jedla ;).

Krompirjeva pita z gobami

Sestavine
  • 2 žlici nesoljenega masla
  • 1 srednje velika čebula, narezana na kocke 
  • gobe
  • brokoli
  • koleraba
  • 1 1/2 žličke soli 
  • sveže zmlet poper
  • 1 skodelica drobno naribanega sira 
  • 1 skodelica drobno naribanega parmezana
  • 1kg krompirja, olupljen in narezan na tanko na kroge 
  • 1 žlica drobno sesekljanega timijana
  • 1 skodelica smetane za kuhanje
Postopek

Segrejte pečico na 180°c. Namažite pekač z maslom in postavite na stran. Stopite maslo v veliki ponev na srednje močnem ognju. Dodajte čebulo, občasno premešajte, dokler se ne zmehča, približno 5 minut pecite. Dodajte gobe, kuhajte, dokler se rahlo ne zmehčajo, občasno premešajte, dokler gobe ne sprostijo svoje sokove in večina tekočine izhlapi, 8 do 10 minut. Odstranite z ognja. Začinite s soljo in poprom. Skuhajte brokoli in kolerabo.

Združite sir v majhni skledi, postavite na stran. Prekrijte dno pripravljenega pekača s krompirjevimi rezinami. Potresite polovico timijana in ščepec soli in popra. Potresemo z 1/3 sira in polovico zmesi gob, brokolija in kolerabe. Ponovite postopek dokler ne zmanjka mase in pustite nekaj sira za konec. Razporedi preostale rezine krompirja. Na koncu vse prelijte s smetano. Na tej točki, lahko jed je pustite pokrito v hladilniku in sicer za največ 1 dan. treba ohladiti, in sicer do 1 dan. Pustite stati na sobni temperaturi 30 minut pred pečenjem.

Ohlapno pokrijte s folijo in pecite, približno 1 uro. Odstranite folijo in potresite s preostalim sirom. Pecite, do zlatega videza 20 do 30 minut. Počakajte 10 min, da se ohladi, preden postrežete.

Sladki krompir s korenjem

Sestavine

  • 2 velika sladka krompirja 
  • 1kg korenja, narezanega 
  • 1/4 skodelice masla 
  • 1 skodelica kisle smetane 
  • 2 žlici sladkorja 
  • 1 čajna žlička limonine lupine 
  • 1/2 žličke soli
  • 1/2 žličke mletega muškatnega oreščka 
  • 1/2 žličke sveže mletega popra

Postopek

Pečico segrejte na 200 °C. Sladki krompir pecite  na aluminijasti foliji ali peki papirju, 1 uro ali dokler se ne zmehča. Zmanjšajte temperaturo peči na 180 °C.

Medtem skuhajte korenje.

Zmiksajte korenje in maslo v multipraktiku do gladkega. Prenesite korenček v veliko skledo.

Narežite krompir in ga do gladkega zmiksajte v multipraktiku. Združite sladki krompir in korenje, vmešajte smetano in preostale sestavin. Mešanico preložite v pekač.

Pecite pri 180 ° C približno 30 minut. Odstranite iz pečice.

Chocolate Cookies with Chocolate Chips / Piskoti s cokoladnimi koscki

I admit, I'm obsessed with books. I love them since I was a little girl and I began to really read them when I was ten years old. I read them intensivly until the middle of high school, then ... well you know, then the guys came and books ran away :). Now they found me again. In addition to tea houses, pastry shops, restaurants, stores with natural cosmetics, small shops with food ... the library is one of my favorite places. Book piles are appering around my desk waiting for me to open them. Mess which I otherwise really don't like and it's difficult for me to handle. The last book that I read, was by Dalai Lama. I recommend it to all of you. I made six pages of notes from this book. It is full of smart lessons, which can help each one of us to achieve a more peaceful life. I myself am an atheist, well no one is really an atheist, if you believe in something you can not see, if you for example believe in a better tomorrow, it means you're not an atheist, but you understand me .. and I found that Buddhism is what I find most close to my heart and therefore can connect with. I like that the focus is on the man himself and how to work on yourself. That's what is most important, we must work on ourself, how do we become better, not how we should change everyone around us. Collective happiness is important, because we can't be happy otherwise. It really is a great read. These cookies have nothing to do with Buddhism, but they are great snack when you are reading any kind of book :) A long time ago I wanted to make them because I'm a little obsessed with the typical american stuff. My friends loved them, and I loved them the most. I will share one nice thought from Dalai Lama for a nice Friday: Genuine compassion derives from its recognition that other people, like myself, want to be happy and have the right to get rid of suffering. On this basis, the person starts to worry about the welfare of others, without regard to their relationship with him. This is compassion.

Ingredients

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 Tablespoon Vanilla
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup cocoa powder
  • 1 cup chocolate chips
  • 1 cup ground hazelnuts

The process

Combine flour, salt, baking soda and cocoa in a bowl, stir with a fork, just to blend. Set to the side.Cream butter and sugars together till smooth and creamy. Beat eggs slightly then add to butter mixture. Add in vanilla.


Now slowly add your flour mixture, make sure the blender is on low or better yet off! And yes, maybe there is a little flour and cocoa powder layer of dust on my cabinet. Once all blended together and smooth, stir in chips.

Spoon dough onto cookie sheets and bake in a preheated 375 degree oven for 9-10 minutes. Let cool on cookie sheets for 5 minutes before removing to racks to cool completely.


Priznam, obsedena sem z knjigami. Obožujem jih že od otroštva in požirati sem jih začela pri desetih letih. Intenzivno sem jih brala vse do sredine srednje šole, potem pa...jah saj veste, ko so fantje prišli, so knjige odšle :). Sedaj pa so me zopet našle. Poleg čajnih hiš, slaščičarn, restavracij, trgovin z naravno kozmetiko, majhnih trgovin s hrano...je knjižnica eden od prostorov, ki so mi najljubši. Okoli pisalne mize so se začeli pojavljati dobesedno kupi knjig, ki me čakajo, da jih odprem. Nered, ki ga drugače res ne maram in ga težko prenašam. Zadnja knjiga, ki sem jo prebrala, je od dalajlame. Vsem jo priporočam. Iz nje sem si naredila za šest strani zapiskov. Polna je pametnih lekcij, ki lahko vsakemu pomagajo pri doseganju mirnejšega življenja. Sama sem sicer ateistka, no nihče ni zares ateist, vsak v nekaj verjame, v nekaj kar ne vidi, že če verjameš v boljši jutri, pomeni, da nisi ateist, ampak saj me razumete..in odkrila sem, da je budizem res tisto, kar mi je še najbolj blizu in s čimer se lahko povežem. Všeč mi je,da je usmerjeno v človeka samega, kako delati na sebi. Ravno to je najpomembnejše, ukvarjati se moramo s sabo, kako bomo sami postali boljši, ne pa kako bi se morali vsi okoli nas spremeniti. Pomembna je kolektivna sreča, saj smo le tako lahko tudi sami srečni. Res je super branje. Tile piškoti nimajo nobene veze z budizmom, pašejo pa zraven vsake knjige. Že dolgo časa nazaj sem jih želela pripraviti, ker sem rahlo obsedena s tipično amerškimi zadevami. Vsi so bili navdušeni nad njimi, jaz pa še najbolj. Še ena prijazna misel dalajlame za današnji petek: Pristno sočutje izhaja iz lastnega spoznanja, da si drugi ljudje, prav tako kot jaz sam, želijo biti srečni in imajo pravico, da se znebijo trpljenja. Na tej osnovi začne človek skrbeti za blagor drugih, ne oziraje se na njihov odnos do njega. To je sočutje.

Sestavine

  • 227g zmehčanega masla
  • 200g belega kristalnega sladkorja
  • 200g rjavega  kristalnega sladkorja
  • 2 jajci
  • 1 žlica vanilije
  • 280g moke
  • 1 žlička soli
  • 1 čajna žlička sode bikarbone
  • 118g kakava v prahu
  • 120g zrnatih lešnikov (ne grobo mletih)
  • 120g čokoladnih solzic

Postopek

Zmešajte moko, sol, sodo bikarbono in kakav v skledo, premešajte z vilicami.
Zmešajte maslo in sladkor skupaj do gladkega. Razžvrkljajte jajca nato dodajte mešanico masla in sladkorja. Dodajte vanilijo.

Počasi dodajte mešanico z moko, poskrbite, da je mešalnik na najnižji hitrosti! In ja, mogoče bo malo moke in kakava pristalo na pultu. Ko je cela masa zmešana in gladka dodajte čokoladne solzice in mlete lešnike.

Oblikujte piškote in jih položite na pekač s peki papirjem. Pecite 10 min na 180 . Piškoti se naj hladijo vsaj 5 min, preden jih odstranite s pekača.
